For staking you can use the Maiar app or the Elrond web wallet - https://wallet.elrond.com. Regarding a Dex, Maiar Exchange is the native dex built by the Elrond team - https://maiar.exchange

When choosing a staking provider there isn't a 'correct' answer or a 'best' SP. But I would advise looking at the following:
1) Their level of expertise
Check their website, blog posts and perhaps @ElrondValidators if you are tech minded. You want to go with a SP who knows what they are doing.
2) Their community engagement
Do they have a Telegram channel or equivalent and how do they respond to people?
3) The general status of their node(s)
Uptime and rating are very important. I would be looking for an uptime as close to 100% as possible. You can get info on individual SPs via the explorer. For example: https://explorer.elrond.com/identities/everstake
4) APR
Note that it isn't a fixed number and it will fluctuate over time. I personally wouldn't go chasing the highest APR
I use Everstake ???????? and Valid Blocks mostly but I also have smaller amounts with a couple of other SPs. My bag isn't huge but I'd rather spread my eGLD around to help decentralise the network and help the smaller SPs a little as opposed to absolutely maximising my returns.

The most secure is to use a Ledger hardware wallet with the Elrond web wallet.
