I'm reading this where I lose my EGLD deposit which is "replaced" by Itheum. However when I took part in the Price Discovery Devnet exercise last week I think I recall being able to withdraw my deposited EGLD after price discovery terminated. Am I confused?

You are swapping for locked Itheum , you can get EGLD back with a 10% penalty in phase 2 and 3 (see table above ) after that May 1st 16.00 UTC is when they are unlocked and you can swap back to EGLD if you wish
